Forgot the Apple Sauce!! Jeezus!!

Recently I've talked about the food we've canned and prepared for stroage.  I talked about all the salsas, and other stuff, but I completely forgot about the first thing we canned...applesauce!

So, tonight, I pulled out one of the preserved applesauce jars to accompany a pork tenderloin.. OH MAN...this was OFF the charts!!

I'm not an expert canner, but I do know food preservation.  One thing I've learned is to..."eat what you put up". 

 If you don't eat what you preserve, and it just goes to waste, then what is the point.  Furthermore, most people throw away canned goods without even trying them...which is sad.  Then, they just throw away thousands of dollars of food because they don't understand.

I am the opposite.  I try stuff after it has been canned for a month, then 3 months, then a year.  I'm not throwing this food away.  Most of it is perfectly good.

Regardless, we'd put up some nice applesauce (no sugar) about 2 months ago.  Tonight I pulled a jar off the high shelf, and guess what?...it was fantastic!

Sorry, I just love talking about this stuff.  Being able to survive on our own isn't all that hard, but it does take some work. 

It's always nice to taste the results!!

I have a pear-apple tree and one year it produced so heavily I thought I'd never get done canning-or eating it all! lol Yhey can be pretty iffy on the acid content, so I always add a tablespoon of lemon juice to each quart. Matter of fact, I do that with apples, too-as many varieties are now testing too low in acid to prevent botulism.

Out of desperation I found quite a few recipes for applesauc, and one that turned out to be a big hit was applesauce pie! Now I'm getting hungry....lol

P.S. Thanks to a late frost this spring and a couple of big wind storms I only got ONE pear-apple this year! If next year is a big harvest I'll just take them down to the town's foodbank.
